About the product

Product description

HONMAMON MOTOKANE Santoku Kurouchi Aogami Super is a professional Japanese knife that features hand forging and a distinctive black finish on the blade.

The blade is handcrafted using traditional blacksmith techniques from elite Aogami Super steel, hardened to a hardness of around HRC 64 ±1, making it one of the sharpest and most durable carbon steels in Japan. Thanks to the traditional Kurouchi technique, the knife retains its dark forged finish, which protects the sides of the blade from corrosion while giving it an authentic appearance.

Each piece is unique. Variations in shades, hammer marks, slight irregularities, and scratches are not defects but evidence of hand forging. The master forges the knife from start to finish using Free Forging technology, which ensures high steel density, excellent edge retention, and a "living" blade shape.

The handle, made from natural walnut, fits comfortably in the hand, provides a non-slip grip, is resistant to moisture, and adds elegance to the knife.

This versatile Santoku is perfect for daily cooking, easily handling meat, fish, and vegetables. It is recommended for experienced users and professionals.
